How to Make Chicken with Mint Like Burma Superstar

I have been enjoying making the Southeast Asian dishes that I have been making since the recipes introduce you to new ingredients, but is really not that far off from how you would normally cook. Chicken and Rice is a very easy dish, but this style cooking takes your chicken to new places that you don’t normally go.

Cookbook – Burma Superstar

Ingredients –

  • Boneless skinless chicken – 1 pound
  • Cumin – 1/2 tsp
  • Ground mustard seeds – 1/2 tsp
  • Sriracha – 2 tbsp
  • Soy Sauce – 1 tbsp
  • Fish Sauce – 1 tsp
  • Sugar – 1/4 tsp
  • Canola Oil
  • Garlic Cloves – 6-8
  • Minced garlic – 1 tsp
  • Minced ginger – 1 tsp
  • Jalapeno – 1/2 chopped
  • Chopped cilantro – for garnish
  • Mint – chopped for garnish

Step 1 – Prep all ingredients

Everything goes pretty quickly once this gets started so make sure have everything already done before starting except maybe the garnishes.

Mince the chicken, cutting across the grain into strips. Then cut the strips finely until everything looks even. Cutting by hand instead of a food processor results in a better texture.

Combine the cumin, ground mustard, sriracha, soy sauce, fish sauce, and sugar.

Step 2 – Start the Chicken

In a large pan or wok, add oil over medium heat. Add the garlic cloves, pool the oil to one side to help cook evenly. Fry until golden brown and softened, remove the garlic, leave oil in the wok.

Increase heat to high, when oil is hot (but not smoking), add the garlic and ginger. Stir for a few seconds then add the chicken. Continue to stir the chicken, spread the chicken across the whole pan. Some water will start to form but it will cook away. Cook until the chicken is light brown in color.

Stir in the liquid mixture, garlic cloves, and jalapeno. Stirring constantly until the liquid lightly coats the meat, mix the chopped cilantro and mint. Serve immediately.
