How to make Nopalito’s Refried Beans

Refried beans for my breakfast huevos rancheros, my taco lunch, and my enchilada dinner, please! I add these on to anything when making Mexican food and they are such an amazing flavor booster. This recipe will not disappoint!

Note that the recipe is similar to the Nopalito braised bean one, but there are a few differences such as the addition of oregano and the food processing.

Ingredients

  • 2 cups dried pinto beans
  • 8 cups water
  • 1 tbsp salt
  • 1 dried guajillo chile
  • 1/4 of white onion
  • 1 1/2 tsp dried oregano

Step 1 – Prepare the beans

Add the pinto beans, water, salt, chile, and onion to the pot.

Boil the ingredients over high heat. After, reduce the temperature so that the beans are simmering. Cover for an hour and a half and let simmer. The beans will be tender but not falling apart.

Drain as much excess liquid as you would like. Taste and add additional salt if needed. Add in the dried oregano as well.

Step 2 – Process the beans

Transfer the braised beans to a food processor. Puree the beans until they are smooth. Feel free to add warm water if you want to smoothen the texture.
