Foreign Cinema’s Farro and Grilled Kale

Who knew that farro and kale would make such an amazing flavor combination! Especially with the red wine sherry vinaigrette and parmesan cheese, this is a perfect side dish or vegetarian lunch. I did not use a grill for this recipe, just a deep pan, but it still came out great. If you are already grilling something, don’t forget to add this recipe into your meal, you won’t be disappointed!

Ingredients

  • 1/2 cup farro
  • 2 1/4 tsp salt
  • 3 tbsp olive oil
  • 1 1/2 lbs of kale (about 3 bunches)
  • 1/4 cup red wine sherry vinaigrette
  • Parmesan cheese

Step 1 – Cook the Farro

Measure out the 1/2 cup of farro. Bring a pot to a boil on high heat and then add 2 tsp of salt.

Once the water is boiling, add the farro and bring the heat down to low. The farro should simmer for 30 minutes uncovered. Stir occasionally and feel free to add more water if it is absorbed before the 30 minutes.

Remove the farro from the heat and drain. Add it to a bowl and mix in 1 tbsp of the olive oil. Set aside.

Step 2 – Prep and Cook the Kale

Cut the kale bunches by removing the stems and cutting the leaves into 3 inch strips. In a bowl, combine the kale with 2 tbsp of olive oil, 1/4 tsp salt, and a few tbsp of water. It should now sit for 10 minutes so that the leaves soften before grilling.

The kale is now ready to cook! Put it directly on the grill or deep pan (on high heat).

Cook one side 3 minutes and then flip and cook the other side 3 minutes. The edges of the leaves should look crisp.

Step 3 – Combine Everything

Add the cooked kale with the farro and pour the vinaigrette on top. Gently mix everything together and shave large pieces of parmesan on top. This is now ready to serve!
