How to make Biscuits like Model Bakery
Biscuits are one of those treats that can go with just about anything. Sweet or savory, breakfast or dinner, spicy or syrupy, take your choice! These biscuits are light, fluffy, and simple to make. In addition to being a great side, some ideas for things to put on them are: butter and syrup, jam, honey, eggs and bacon, gravy, fried chicken, pimento cheese, peanut butter and jelly, or anything else you can get creative with!
Ingredients –
- 3 cups of all purpose flour (and more for rolling the dough)
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sugar
- 1/2 tsp salt
- 3/4 cup unsalted butter
- 3/4 cup buttermilk
- 1/2 cup half and half (and more for brushing biscuits)

Step 1 – Prepare Dough
Preheat the oven to 400 F.
Using a sifter, combine the flour, baking powder, baking soda, sugar, and salt together in a bowl. Add the butter in and use a pastry blender to cut into the mixture until it is crumbly.
Using a whisk, combine the half and half and buttermilk.
Create a hole in the bottom of the dry mixture and add the wet mixture. Stir to mix everything together into a dough. Try to knead the dough in the bowl a few times before transferring to a work surface.
Step 2 – Cut Dough
Take the dough out of the bowl and put on a lightly floured work surface. Add some more flour on top of the dough, too.
Roll out the dough to be about 3/4 inch thick.
If you have a biscuit cutter, perfect! Now is the time to us it. If you do not like me, find anything in your kitchen that is about 2 1/2 inches in diameter. I ended up using the top of a cocktail shaker. A small bowl could do the trick as well!
Line a baking tray with parchment paper and place the biscuits 1 inch apart once cut.
Use the scraps of the cut dough and knead back together. Keep cutting biscuits until the dough is mostly used up.
Step 3 – Bake
Use some half and half to lightly brush on the top of the biscuits before baking.
Bake 20-25 minutes. They will be golden brown on the top and bottom, lift a biscuit to double check!
