How to Make Green Beans from Slanted Door

Slanted Door is a modern Vietnamese establishment that has moved through a few locations in the city before landing in the Ferry Building. I really love their cookbook and its simplicity, and also has the best cookbook story about when Bill Clinton as president dropped in unannounced when he was visiting Chelsea while at Stanford.
I wouldn’t say these are the best green beans I have had, those go to Hawker Fare, but this is a great start to elevating your green bean game.
Chefs note – I actually halved the green bean amount and kept everything else about the same except using less canola oil and felt that was about the right portion.
Cookbook – Slanted Door – Modern Vietnamese Food
Ingredients –
- Salt
- Green beans, cut into two inch pieces – 4 cups
- Canola oil – 1/2 cup
- Garlic – 6 cloves – semi thinly sliced
- Sugar – 2 tablespoons
- Fish sauce – 2 tablespoons
- Rice wine – sake or michiu – 1/4 cup
Step 1 – Blanch the green beans
Bring a pot to a boil. Put int he green beans for 1 minute. Strain immediately
Step 2 – Sauce boss
Heat a wok or anything you have somewhat resembling that on high heat with the canola oil. Add the garlic first, cooked until lightly browned, should be about 1 minute. Add the sugar by sprinkling along the sides, let caramelize for a minute, then add fish sauce, rice wine, and green beans to the mix. Fry until sauce is reduced by half.
Be careful adding the later ingredients, some fish sauce exploded onto me and my fridge and scared the crap out of my girlfriend, it’s very hot in case you were wondering.
But that is it! Simple, yet elegant and fresh flavors to elevate your green bean game!

- Taste – 4/5 stars – Very good dish – I wish I could have gotten them more blistered, but still very nice
