How to make Salsa Fresca like Tacolicious

Tacolicious calls this their “lazy salsa” because it is so simple. It is very delicious and fresh as well! There are two ways to make it, depending on the ripeness and season of your tomatoes.

It is currently November, therefore I decided to make the salsa the roasted way. However, you can also make this recipe just by chopping all of the ingredients (use 1 jalapeño instead of 2) and combining them. I am looking forward to doing this in the summer when tomatoes are back in season! When this is not pulsed in the blender, the salsa looks more like a pico de gallo. It is a classic salsa that you can put on just about anything. The jalapeños add a nice kick, but it is not too spicy. This is sure to become a staple salsa for us.

Ingredients

  • 4 Roma tomatoes
  • 2 jalapeños
  • 1/4 cup of lime juice (about two limes)
  • 1/2 yellow onion
  • 2 tsp salt
  • 2 tbsp cilantro

Step 1 – Chop

First slice the Roma tomatoes lengthwise. Next deseed, destem, and cut the jalapeños lengthwise. Take half of the yellow onion and cut it into one inch half moons.

Place the tomatoes, jalapeños, and onions on a foil lined baking sheet.

Step 2 – Broil

Broil the tomatoes, jalapeños, and onions for 10-15 minutes until they are soft and charred.

Step 3 – Combine

Take the juice from about two limes (1/4 cup) and the salt (2 tsp) and place in either a blender or a food processor. Once cooled, add the tomatoes, jalapeños, and onions in as well.

Pulse the ingredients so that it is chunky but combined. You can also chop the tomatoes, jalapeños, and onions if preferred to have a more rustic salsa.

And done! Serve with your favorite chips.
