How to make Nopalito’s Corn Tortillas

Corn tortillas are a great staple food to have on hand. They can go in a variety of dishes, like tacos, enchiladas, tostadas, taquitos, flautas, chips, or quesadillas, to name a few. This recipe is delicious and you do not need a tortilla press, we are going to improvise! Once you make them, you will never buy corn tortillas from the store again.

Ingredients

  • 2 cups of maseca flour (this is what I used and is most commonly available for instant corn tortillas)
  • 1 1/2 cups of water
  • Salt

Tools

  • Tortilla press or large pan or large pot
  • Mixing bowl
  • Parchment paper
  • Frying pan

Step 1 – Make Tortilla Dough

Measure out your flour into the mixing bowl. Generously salt the flour and then add all of the water. Stir together in the bowl and then remove to mix together by hand form a dough ball. You are now ready to press.

Step 2 – Press Tortillas

Tear off two pieces of parchment paper. You do not have to have a tortilla press to make these. I typically have used the bottom side of a flat pot and simply pressed the dough in between!

Start off with a ball of dough slightly smaller than a golf ball, and then press between your desired press.

Step 3 – Cook Tortillas

To cook simply, put them one at a time into a hot frying pan with no oil and continue to brown on each side.

I can usually press out 2-3 before one is done cooking. So my usual cadence while making these is to get the pan hot, press one, throw it in the pan, make 2-3 more to have ready, and rinse and repeat the process.

Wonderful! They always turn out great. Depending on the size, this recipe should make about 16 tortillas.

A quick tip for serving – After grilling all of the tortillas, place paper towels on the top and bottom, and then wrap in plastic wrap and leave for an hour or more. This will cause the tortillas to slightly steam, and will have more elasticity when loading it with the toppings of your choice.
