How to Make Nopalito (Green Salsa) Tomatillo y Serrano Salsa
This is some of the best green salsa I have ever had, and I am so happy it came from my own kitchen. This is so easy to make, your friends will think you buy this stuff from a restaurant. I also cannot wait to experiment more and deviate from this recipe to make something of my own.
This is a classic green salsa, with roasted tomatillos, onions, serranos, and garlic. It’s so easy, that you roast those ingredients, put them in a food processor, add a little salt, and that’s it. Such a game changer for anyone who enjoys some good chips and salsa. I can’t believe how easy this was, expect more salsas on here soon.

Recipe – Salsa de Serrano y Tomatillo
Ingredients –
- Tomatillos – 10 – husked, rinsed, patted dry
- Serrano chiles – 1-4 depending on the level of heat you want
- White onion – 1/2 to roast, and another 1/4 finely chopped
- Garlic – 2 cloves
- Fresh Cilantro – 1/4 cup, or less on your preference – finely chopped

Step 1 – Make the Salsa
Preheat the oven to 450 F. Place the tomatillos, 1 or more of the chiles, 1/2 of the onion, and the garlic in the roasting pan. Flip the tomatillos and chiles half way until the skins are blackened all over. About 20 minutes, remove and let cool slightly.
Place the roasted ingredients into a food processor, process the ingredients until a desired consistency for a salsa. I prefer it on the smooth side, but feel free to do less if you prefer chunky. Taste, and adjust with salt as needed. Stir in the 1/4 cup chopped onions and cilantro.
You might notice more onions in my photos, and that is because I got some fresh from a friends garden but they were quite small, so I estimated the amount compared to a normal store bought onion. Plus threw in a tiny red one for good measure because I had it. I also made it will slightly less tomatillos since the ones I got were huge! The ones you get at a farmers market compared to the supermarket are a big difference.
