How to Make Mexican Street Corn like Nopalito

This recipe is so simple, so easy, anyone can make this and barely takes any time at all. We used only 2 ears of corn instead of 3 and had zero leftovers within about 10 minutes because of how great this is. Plus you are getting two recipes within in, to top the corn, you need to make fresh pico de gallo!

This is typically a dish served by street vendors in Mexico, and is a perfect dish to shake things up at home. I prefer eating it with tortilla chips, but can be eaten straight as well. Hope you enjoy, let me know what you think in the comments below!

Ingredients –

  • Corn kernels, cut from 3 ears of corn
  • Fresh lime juice – 2 tbsp
  • Salt – 1 tsp
  • Sour cream – 1/2 cup
  • Queso Fresco – 1/2 cup
  • Chili powder – 1 1/2 tsp
  • Smoked Paprika – 1 1/2 tsp
  • Pico de Gallo – 1/4 cup (recipe follows)

Pico de Gallo –

  • Red onion – 1/2 cup
  • Fresh lime juice – 2 tbsp
  • Salt
  • Red tomatoes – 3 – take out the seeds and filling
  • Cilantro – 2 tbsp
  • Jalapenos – 2 – diced
  • Scallions – 1/2 bunch

Tools

  • Pan
  • Chefs knife

Step 1 – Make the Pico

In a medium bowl, stir together the onion, lime juice, and salt, let sit for 5 minutes. Add all ingredients to the bowl, taste and adjust for seasoning as needed.

Step 2 – Toast the Corn

In a large skillet over high heat, cook the kernels. Stirring occasionally, until lightly charred, about 5 minutes or so. If the kernels are jumping, turn the heat down slightly. Remove from burner, stir in the lime juice and salt. Taste and adjust seasoning or acidity as needed.

Step 3 – Combine and Enjoy

Place all the kernels into one bowl, top with sour cream, queso fresco, chili powder, smoked paprika, and pico de gallo. Just before serving, stir in all ingredients into the corn.
