Hawker Fare’s Muddled Long Bean Salad

This is a refreshing salad that makes for a great side dish. Finding long beans was actually difficult so green beans were used in this recipe instead. I will also warn that this is a spicy recipe too!

Recipe – Muddled long bean salad

Ingredients

  • 3 dried Thai chilis
  • 1 garlic clove
  • 1/2 tbsp shrimp paste
  • 3 tbsp sugar
  • 1/2 lime cut into 4 wedges
  • 1 1/2 tbsp fish sauce
  • 1 1/2 tbsp padaek
  • 8 ounces long beans, cut in 1 1/2 pieces (or green beans)
  • 3 ounces cherry tomatoes, cut in half

Step 1 – Make the Sauce

If you have a mortar and pestle, that would work great for this. If not, which I did not either, do your best to grind and cut everything up.

Take the chilis and ground them into flakes. Next add the garlic and shrimp paste to the chilis and ground them all together into a paste. Add the sugar and lime wedges (if you do not have a mortar squeezing just the juice is ok). Fish sauce and padaek should be added next.

Step 2 – Muddle the Long Beans and Tomatoes

Add the sauce to the long beans and cherry tomatoes. Next step is to gradually pound the ingredients together. The tomatoes and beans should be slightly crushed so that the dressing is incorporated well.

Once combined, this is ready to serve!
